Feta Spinach Stuffed Salmon Fillets
I have recently developed a huge appreciation for salmon. It is just so good for you- filled with high-quality protein, potassium, selenium and vitamin B12, and omega-3 fatty acids. The spinach is rich in iron, calcium, and antioxidants. Feta cheese provides protein and calcium while being lower in fat compared to other cheeses. Plus, they cook up nicely into a healthy meal that is quick and full of rich flavor.

Spinach Feta Stuffed Salmon from Holly Clegg’s Too Hot in the Kitchen Cookbook

Makes 4 servings
Simple Ingredients
- 2 ounces reduced-fat cream cheese
- 1/2 cup crumbled reduced-fat feta cheese
- 1/2 cup chopped baby spinach (fresh spinach, fine chop)
- 4 (6-ounce) salmon fillets
- 1/3 cup chopped red onion
How To Make Stuffed Salmon
1. Preheat oven 350°F. Coat baking dish with nonstick cooking spray (or thin layer of olive oil).
2. In bowl, combine cream cheese and feta with fork, mixing until blended. Add onion and spinach, combining well.
3. On a cutting board, split each piece of salmon in half lengthwise without cutting all the way through (make pocket). Divide creamy spinach mixture in the center of the salmon spreading to cover. Sprinkle the top of the fillet with salt and pepper.
4. Place top salmon piece back over filling and on prepared baking dish. Bake for 20 minutes in preheated oven or until flaky and done.
